Vegan Chia Chocolate Mousse
This chocolate mousse ticks all the boxes without the guilt. It is creamy and indulgent with no sugar and no dairy products.
- 3/4 cup chia seeds
- 1/3 cup & 1 tbs Cacao powder
- 2 pinches sea salt
- 2 1/4 cups almond milk (or any nut milk)
- 1/4 cup (plus 1 1/2 tablespoons)rice malt syrup
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups dark melting chocolate
The previous night or at least 1 hour before, combine the chia seeds, the salt, cacao powder, rice malt syrup, vanilla extract and the almond milk in a large bowl. Whisk until all the clumps have dissolved. Cover with cling film and put in the fridge (overnight or minimum 1 hour). Remove the chia seed mixture from the fridge and blend in a blender until smooth. Melt the chocolate on a double boiler and add to the chia seed mixture, blend on low until everything is incorporated. Scoop the mixture into a bowl and refrigerate for 2-3hours.
Remove from the fridge, serve & enjoy!
