Hummus trio

I always battle with 4pm hunger pangs and being a big believer of having one or two snacks throughout the day to keep my sugar levels stable, they don't always leave me feeling satisfied and nourished. For me, chickpeas do the trick-they are light yet fulling and give me that energy surge I need before that 5.30pm rush in our household.

Chickpeas are so versatile: Added to salads, roasted as a crunchy snack, added to cakes, used to make falafels, the main ingredient in a vegetable curry, the list goes on. Hummus being one of our favourites and by putting different combinations together you can make so many delicious flavours.

Here are our three favourite combinations-perfect added to wraps, mezze platters and used as a snack with cucumber, carrot slices & crackers.

Sweet potatoe & roasted carrot hummus:

  • 1 Large sweet potato, roasted

  • 2 large carrots, roasted

  • 5 Tbsp extra virgin olive oil

  • 3 tbsp lemon juice

  • 3 tbsp tahini

  • 1 Tsp cumin

  • 1 Tsp tumeric

  • 3 Tbsp water, if necessary

  • Salt & pepper

Add all ingredients to a blender/nutribullet and blend until smooth

Avocado & bean hummus:

  • 250g chickpeas, cooked

  • 1 C white beans, cooked

  • 1 avocado

  • 3 Tbsp extra virgin olive oil

  • 3 Tbsp lemon juice

  • 3 Tbsp tahini

  • 1 pod of garlic

  • 1 Tbsp coriander, fresh

  • 3 Tbsp water, if necessary

  • Salt & pepper

Add all ingredients to a blender/nutribullet and blend until smooth

 

Beetroot hummus:

  • 300g chickpeas, cooked

  • 250g beetroot, steamed

  • 3 Tbsp extra virgin olive oil

  • 3 Tbsp lemon juice

  • 3 Tbsp tahini

  • 1 pod of garlic

  • 1 Tbsp coconut cream

  • Salt & pepper
